I made 8 dozen of these the other night. Country Magazine was usually in the house growing up, and my mom snagged this recipe out of it. Oh, yum! Note: not to be made/eaten if you are “dieting” – I don’t have the nutritional (or lack thereof) information. But something so good can’t be brilliant for you. LOL
Chewy Chocolate Cookies
2 c. flour
3/4 c. unsweetened baking cocoa (I use Hershey’s)
1 tsp. baking soda
1 tsp. salt (never put in the whole amount though…usually only 1/2 t.)
1 & 1/4 c. butter or margarine
1 & 1/2 – 2 c. sugar (I used 2 c. last time and they were perfect)
2 tsp. vanilla
2 eggs
Combine dry ingredients in a small bowl (flour, baking soda, salt, unsweetened cocoa); set aside.
Cream butter (slightly softened) and sugar, then add the eggs & vanilla.
Add in the dry ingredients (careful the cocoa is very powdery). I put half in, mix it, then the rest, etc.
Bake @ 350 degrees for 8 – 9 minutes – seriously, set your timer DO NOT OVERBAKE!!! (I never time anything but you need to time these.) I greased the cookie sheets because my pans are getting old but if you have new, good ones you probably don’t have to.
Makes approx. 4 & 1/2 dozen. (Mine only made 4 doz.)
